Get in the Winter Mood With This Mug Cake!

Sure, you can find a ready-made mix for every baked good out there. But this year, COVID-19 has made it harder to go out, and many of us just want to stay home. This easy mug cake recipe makes a fun treat using spare ingredients lying around your home!

Ingredients:

  • 1/4 cup flour
  • 1/4 cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons 3/2 oz melted butter
  • 3 tablespoons whole milk at room temperature
  • 1 egg at room temperature
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon water

Directions:

  1. In a 2 cup capacity or larger mug, whisk flour, sugar, cocoa powder, baking powder and salt with a fork until combined.
  2. Add in the melted butter, milk, egg and vanilla.
  3. Use your fork to whisk until it is well combined, and no flour mixture is stuck to the bottom.
  4. Dump a tablespoon of water on top of the batter. Do not mix it.
  5. Cook in the microwave on full power for 1 minute and 20 seconds to 2 minutes or until the cake rises to the top and the water has been absorbed into the center. 
  6. If you want a molten interior, do not over bake. Check after 1 minute 20 seconds , and add 5-10 seconds at a time until desired doneness is reached.
  7. Remove from the microwave and let it cool for 3-5 minutes.
  8. Top with anything of your choice! Some of my favorites are whipped cream, crushed candy canes and caramel.
