Apple Crumble Recipe
Filling
6-8 medium to large apple (I used Braeburn.)
2 tablespoons sugar
1/2 teaspoon ground cinnamon
2 teaspoons fresh lemon juice
Crumble
3/4 cup unbleached all-purpose flour
1/2 cup sugar
1/2 teaspoon salt
1/4 pound (1 stick) cold unsalted butter, cut into 3/4-inch pieces
Directions:
1. Peel and core the apples. Use a potato peeler, unless you are lucky enough to have an apple peeler. Cut them into 1/2 to 3/4 inch pieces.
2. Preheat the oven to 350F. Make sure there is a rack positioned in the middle of the oven.
3. Put the apples in a ceramic or glass 8 or 9 inch square baking dish or 9 1/2 to 10 inch diameter round dish both with 1 3/4 to 2 inch high sides.
4. Mix the sugar and cinnamon together in a small bowl. Pour the sugar cinnamon mixture and lemon juice on to the apples, then mix it in.
5. Mix the flour, sugar and salt in a large bowl. Add the butter pieces and coat them with the flour mixture.
6. Rub the butter and flour between your thumb and fingertips. Continue doing this until 1/2 to 3/4 inch crumble form and there is no loose flour.
7. Spread the crumbles over the apple mixture.
8. Bake for about 40 minute or until the topping is golden brown with a few darker spots, and the apples are tender.
9. Let cool for 15 minutes and serve warm.
Options:
– Use 6 cups of a different fruit, such as nectarines, berries or pears, in place of the apples.
– Add 1/4 cup of oatmeal to the crumble mixture.
– Serve the crumble a la mode.
